Yield - 3 to 4 persons servings

Ingredients

Rava (or) Semolina (or) Sooji - 2 cups

Curd (homemade is preferred) - 1 cup

Turmeric Powder - ¼ tsp.

Salt - ½ tsp.

Green Chilli (Chopped) - 1 tsp.

Carrot (Grated) - 1 tsp.

Coriander Leaves - as required

Gingly Oil (or) Ghee - 1 tbsp.

Mustard seed - ¼ tsp.

Split Urad Dal - 2 tsp.

Cumin Seeds - 2 tsp.

Chana Dal - 2 tsp.

Cashewnuts (Chopped) - 1 tsp.

Hing (or) Asafetida Powder - ¼ tsp.

Ginger Paste (or) grated ginger - ½ tsp.

Baking Powder (or) Eno Salt - ½ tsp.

Instructions

1.

To start with, lets add the semolina into the mixing bowl.

Add curd into the same and give a quick mix. Add half cup of water to get the required consistency.

3.

Add turmeric powder and salt and stir well to get the good mixture. Batter should be thick.

4.

Cover the batter with a lid and allow to soak for 10 mins. After soaking the thickness of the batter should be smooth & creamy and should not be too watery.

Add green chili, carrot, coriander leaves and combine well and keep the batter aside for 10 mins.

Prepare the seasoning: Add oil into the small fry pan / tadka pan.

7.

Once oil is heated, add mustard seeds, urad dal, cumin seeds, chana dal, chopped cashewnuts, stir in medium heat until it turns golden brown in color, then add hing powder and ginger paste, fry well and take out from the flame.

Pour the seasonings to the batter, also add baking soda or eno Salt.

9.

Combine well and the batter is ready to make idlies. (don't let the batter to sit for long time, after adding baking soda)

10.

Grease the Idli plates and pour the batter into the mould and steam cook the Idli for about 10 mins, on medium heat.

11.

Allow the idlies to cool down for couple of minutes and take the idlies with moist spoon.

12.
