Cucumber roti is a healthy bread recipe, excellent to serve with yoghurt, pickle and spicy curries, making a delicious dinner menu. This authentic recipe is quite popular in North Indian cuisine and tastes divine. This recipe takes barely any time to be prepared and is one of the best lunch box snack item.

Ingredients
Cucumber - 2
Green chilli - 2
Grated ginger - 1 tsp
Wheat flour - 1 cup
Besan flour - 1/4 cup
Cumin pwd - 1/2 tsp
Ajwain (omam) pwd - 1/2 tsp
Turmeric pwd - 1/4 tsp
Sugar - 1/2 tsp
Oil or ghee - 2 tbsp
Salt to taste
Mint and coriander leaves
Instructions
1.
Wash and slice cucumber to small pieces.
2.
Add to blender.
3.
Add green chilli, grated ginger, mint and coriander leaves.
4.
Add 1/2 cup of water and grind to smooth paste.
5.
Transfer the cucumber paste to mixing bowl.
6.
Add salt, cumin pwd, turmeric pwd, ajwain pwd, sugar (optional) and stir well.

Add besan flour.
8.
Add wheat flour little by little and knead.
9.
Add oil and knead to smooth dough.
10.
Let the dough rest for 5 mins.

Divide into equal sized balls.
12.
Take a dough ball, dust with flour and roll it to round discs as shown in video.

Heat a frypan.
14.
Place the roti on hot pan.

Drizzle butter or oil and fry on both sides until the roti is cooked to golden brown.

Remove from pan.
17.
Healthy and yummy cucumber roti is ready.

Serve hot with any curry or yoghurt or pickle.
