Looking for something new and healthy recipe for dinner? Here comes the handy recipe, beetroot roti, which is very delicious and rich in nutrients. This colorful beet rotis not only looks inviting but is more healthy too. Kids love this vibrant color and amazing taste. It pairs up excellent with raitha, pickle or any subzi.

Yield - 4 servings
Beetroot slices - 1 cup
Green chilli - 2
Ginger garlic paste - 1 tsp
Wheat flour - 2 cups
Cumin pwd - 1/2 tsp
Garam masala pwd - 1/2 tsp
Amchoor pwd - 1/2 tsp
Ajwain pwd (omam) - 1/2 tsp
Fresh coriander leaves
Salt to taste
Wash the beetroot and peel off the skin.
Slice to small pieces.
Add to blender. Add green chiili and ginger garlic paste.
Add 1/4 cup water and grind to smooth paste.
Transfer the beetroot paste to mixing bowl.
Add salt, cumin pwd, garam masala pwd, amchur pwd, ajwain (omam) pwd and mix.
Add wheat flour little by little and knead to soft dough.
Add 2 tbsp of oil, fresh coriander leaves and knead.
Let the dough rest for 5 minutes.
Divide it to equal sized balls.
Take a dough ball and dust with flour.
Roll to flat disc as shown in video.
Heat a frypan.
Drizzle oil or butter to the pan.
Place the paratha in fry pan, and fry to both sides until golden brown spots appear.
Remove from hot pan.
Colorful, healthy delicious beetroot paratha/ roti is ready.
