Ragda Patties is a quick delicious mumbai street food recipe. In this recipe, the potato patties are topped with chana or dried peas gravy, two chutneys, onions, tomatoes and spicy sev. Chana / kondakadalai - 2 cups

Turmeric pwd - 1/4 tsp

Red chilli pwd - 1/2 tsp

Cumin pwd - 1/2 tsp

Salt - 1/2 tsp

To prepare patties:

Potato - 2

Poha - 2 tbsp

Bread crumbs - 2 tbsp

Cumin pwd - 1/2 tsp

Turmeric pwd - 1/4 tsp

Red chilli pwd - 1/2 tsp

Chat masala pwd - 1/2 tsp

Green chilli - 1 or 2

Coriander leaves

Salt to taste

To serve:

Green chutney - 1 tbsp (check here to view the recipe of homemade green chutney & sweet chutney)

Sweet chutney - 1 tbsp

Red chilli pwd - 1/2 tsp

Cumin pwd - 1/2 tsp

Chat masala pwd - 1/2 tsp

Sliced onion - 1 tbsp

Sliced tomato - 1 tbsp

Coriander leaves

Salt to taste

Instructions

1.

Wash and soak chana (kondakadalai) in water overnight or for minimum 6 hours.

Drain water and add to cooker.

Add 2 cups of water.

4.

Add 1/4 tsp of turmeric pwd, 1/2 tsp of red chilli pwd, 1/2 tsp of salt and 1/2 tsp of cumin pwd.

Mix well.

Pressure cook for 5 whistles or until the chana is cooked soft.

Mash the cooked chana and set it aside.

Lets Prepare Patties:

Wash and cook potatoes until soft.

Peel off the skin and mash.

Wash and soak poha for 2 mins in water.

Drain water completely and add poha to mashed potato.

Add salt, bread crumbs, cumin pwd, turmeric pwd, red chilli pwd, chat masala pwd, sliced green chilli and coriander leaves.

Mix well to soft dough.

Divide it to equal sized balls as shown in video.

Take one ball and pat it flat.

Repeat the same with the rest of the dough.

Heat 2 tbsp of oil in frypan.

Once the oil is hot, place the patties and shallow fry in medium flame.

Once the patties are cooked to golden brown with crispy outer texture, remove from heat.

Arrange in plate.

To Serve

Take a serving plate, add the chana masala prepared.

Place 2 patties on the masala.

Pour more chana over it.

Drizzle green chutney, sweet chutney on it.

Sprinkle some salt.

Sprinkle red chilli pwd, cumin pwd, chat masala pwd, sliced onions, tomato & coriander leaves.

Garnish with spicy namkeen.
