Here is the easy recipe of restaurant style crispy masala dosa that tastes lipsmacking delicious along with a stuffing of flavorful potato masala. It is a very popular breakfast recipe of South Indian cuisine. It is a favorite option of everyone in restaurants all over the world. Its quite easy to prepare this stuffed dosa at home. The fermented crepe is made from batter prepared out of rice and lentils and stuffed with potato masala made of fried onions and spices.

Ingredients
To Prepare Dosa Batter
Idli rice or parboiled rice - 2 cups
Poha - 2 tbsp
Urad dal - 1/2 cup
Methi / fenugreek / vendayam - 1 tsp
Salt to taste
To Make Masala:
Potato - 2 to 3
Oil - 1 tbsp
Mustard - 1/4 tsp
Cumin - 1/2 tsp
Split urad dal - 1/2 tsp
Hing / asafoetida - a pinch
Red chilli - 1
Curry leaves - a few
Ginger - a small piece
Garlic - 3 to 4
Onion - 1
Green chilli - 2
Turmeric pwd - 1/4 tsp
Fresh lemon juice - a few drops
Coriander leaves
Salt to taste
Instructions

Lets Prepare Dosa Batter

Wash and soak idli rice / parboiled rice in water. Add 2 tbsp of poha to it.

Wash and soak urad dal and methi seeds in water in separate bowl.

Let it soak overnight or minimum 6 hours.

Drain water and add to blender.

Grind both rice and dal separately to smooth batter.

Add it to mixing bowl, add salt and mix well. (mixing with hands enhances the fermentation process quickly)

Allow the batter to ferment for 7 to 8 hours.

Homemade dosa batter is ready to prepare crispy dosa.

To Make Masala :

Wash and cook potatoes until soft.

Peel off skin and mash them.

Set it aside.

Heat 1 tbsp of oil in frypan.

Add mustard, cumin, split urad dal and hing.

Wait to splutter.

Add red chilli and curry leaves.

Add grated ginger, garlic, green chilli and saute.

Add finely sliced onions, salt and saute until light brown.

Add turmeric pwd and mix.

Add mashed potatoes and stir in high flame.

Turn off flame.

Add few drops of fresh lemon juice.

Garnish with coriander leaves.

To Make Masala Dosa

Heat a dosa pan.

Grease with oil.

Take a ladle full of dosa batter and spread it in concentric circles as shown in video.

Drizzle oil to sides.

Cover and cook in medium flame.

Once the dosa is cooked golden and crispy, stuff 2 to 3 tbsp of potato masala and fold the dosa.
