Palak Paratha is one of the flavorful and best paratha recipe that can be prepared for dinner. It can be prepared in a jiffy and tastes heavenly with a combo of pickle and raitha. We know palak is loaded with vitamins, fibres and minerals. In this recipe the palak puree or spinach puree is combined with wheat flour and spices and kneaded to smooth dough and prepared paratha. Its an excellent way to include healthy greens in our diet that too tasty!

Ingredients

Palak (keerai / spinach) - 1 bowl

Green chilli - 2

Grated ginger - 1 tsp

Garlic - 3

Besan flour - 2 tbsp

Wheat flour - 2 cups

Ajwain pwd - 1/2 tsp

Oil - 2 to 3 tbsp

Butter - 2 tsp

Salt to taste

Instructions

1.

Clean and wash palak. Slice to pieces.

2.

Boil 4 to 5 cups of water in pan.

3.

Add palak and allow to boil for 2 to 3 mins.

Turn off flame.

5.

Drain palak from water.

6.

Add it to blender.

7.

Add green chilli, ginger and garlic.

8.

Add 1/4 cup of water and grind to smooth paste.

9.

Transfer the paste to mixing bowl.

Add salt and besan flour.

11.

Give a quick mix.

12.

Add wheat flour little by little and knead.

13.

Add oil and knead to smooth soft dough.

14.

Cover the dough with damp cloth and allow to rest for 5 mins.

Divide the dough into equal sized balls.

Take a ball, pat it flat.

17.

Dust with flour and roll it to thick round disc.

18.

Repeat the same for the rest of the dough.

19.

Melt a tsp of butter in frypan.

20.

Place the paratha in the hot pan and cook on both sides.

21.

Drizzle oil to the sides and roast until golden brown.

22.

Remove from flame.

23.

Aromatic delicious palak paratha is ready.

24.

Serve hot with pickle and raitha.
