Yield - 4 servings
Broccoli - 1 small size
Butter - 1 tbsp
Sliced onion - 1/2 cup
Sliced potato - 1/4 cup
Grated garlic - 1 tbsp
Almond nuts - 7 to 8
Whole milk - 1 cup
Pepper pwd - 1/2 tsp
Sugar - 1/2 tsp (optional)
Salt to taste
Clean, wash and chop the broccoli to fine florets.
Drain water and set aside.
Soak almond in warm water for 5 mins.
Drain water and peel the skin and set aside.
Melt butter in cooker or thick pan.
Add grated garlic and saute.
Add sliced onions, potatoes and saute for a minute.
Add broccoli and toss in high flame.
Add 1/2 tsp of salt and 1 cup of hot water.
Pressure cook for 1 whistle.
Turn off flame and wait till the pressure goes off.
Open the lid and you can see the broccoli is cooked soft as shown in video.
Drain and water and reserve.
Add the broccoli to blender.
Add almonds and grind to smooth paste.
If required add very less water to enhance grinding.
Transfer the broccoli paste to sauce pan.
Add the drained water (step 14) and adjust the thickness of the soup.
Add 1 cup of thick whole milk and stir.
Now keep the sauce pan in flame and cook the soup in medium flame.
Add pepper pwd, salt and sugar (optional)
Allow the soup to boil for a minute.
Turn off flame.
Creamy delicious healthy Broccoli soup is ready.
