Ingredients
Grated beetroot - 1 cup
Gram dal / kadala paruppu - 1 cup
Toor dal - 1/4 cup
Sliced onion - 1/4 cup
Red chilli - 2
Grated ginger - 1 tsp
Saunf pwd - 1/2 tsp
Curry leaves
Coriander leaves
Salt to taste
Oil to deep fry
Instructions
1.
Wash and peel off the skin of beetroot.
2.
Grate to fine shreds.
3.
Wash and soak gram dal (kadala paruppu) and toor dal separately in water for 1 hour.

Drain water.
5.
Add the dal to blender.
6.
Add salt, saunf pwd, grated ginger, red chilli and grind to coarse mixture. Take care not to add water while grinding.
7.
Transfer the mixture to mixing bowl.
8.
Add chopped onion, grated beetroot, curry leaves, coriander leaves, rice flour and mix well.
9.
Make small balls out of it and pat it flat to vada shape.
10.
Heat oil in fry pan or kadai.
11.
Drop the vadas carefully one at a time.
12.
Take care not to overcrowd the oil.
13.
Deep fry the vadas in medium flame.
14.
Once the vadas turn crispy on both sides, drain from oil in kitchen tissue.
15.
Repeat the same for the remaining batter.
16.
Colorful, healthy delicious beetroot vadas are ready in no time.
