Today's post is another popular and favorite recipe of South Indian breakfast - Rava dosa! Its one of the classic recipe of Indian cuisine and very popular in restaurants. It can be prepared quickly and makes up perfect for a busy weekday breakfast/dinner. In this instant version, there is no need of soaking and fermenting steps like regular dosa. This very tasty and crispy dosa combines excellent with sambar or chutney.
Ingredients
Rice flour - 1 cup
Sooji / rava - 1 cup
Maida flour - 1/2 cup
Cumin seeds - 1 tsp
Crushed pepper - 1 tsp
Sliced green chilli - 1 tsp
Sliced onions - 1/2 cup
Fresh curry & coriander leaves
Yoghurt or curd - 3 to 4 tbsp
Salt to taste
Instructions

In a mixing bowl, add rice flour, rava and maida flour.

To it add salt, cumin seeds, crushed pepper corns and mix well.

Add sliced onions, green chilli, curry & coriander leaves
4.
Add thick yoghurt or curd and combine.
5.
Now add water little by little and stir to thin batter as shown in video.

The batter should be free flowing and in buttermilk consistency.
7.
Cover the batter with lid and let it sit for 5 mins.
8.
Heat a griddle preferably non-stick pan.
9.
Drizzle oil and pour the batter on the hot pan. (refer video)

Let the dosa cook on low flame until crispy.
11.
Flip over to other side and cook for a minute.
12.
Drizzle few drops of oil on the sides.
13.
Once the rava dosa is cooked golden and crispy, remove from flame.
14.
Yummy delicious crispy rava dosa is ready.
15.
Enjoy hot with sambar, chutney.
