Lemon Poha is one of the very popular and healthy Indian breakfast recipe. It comes very handy for a hurry weekday mornings. It has become my kids favorite snack due to its tempting taste with inviting fresh lemon aroma. This recipe is very quick to put together. Everyone including beginners can prepare this healthy dish & it tastes delicious when eaten hot or in the room temperature. The peanuts added gives crunch and texture to this temptinig dish.
Ingredients
Poha - 1 cup
Oil - 1 tbsp
Mustard - 1/4 tsp
Cumin - 1/2 tsp
Split urad dal - 1 tsp
Chana dal - 1 tsp
Curry leaves - a few
Red chilli - 1
Green chilli - 1 or 2
Grated ginger - 1 tsp
Peanuts - 1 tbsp
Cashewnuts - 3 to 4
Grated coconut - 1 tbsp
Hing / asafoetida pwd - 1/4 tsp
Turmeric pwd - 1/4 tsp
Sugar - 1/2 tsp
Lemon juice - 2 tbsp
Salt to taste
Fresh coriander leaves
Instructions
1.
Wash and soak poha in water for 1 minute.
2.
Drain water and set it aside.
3.
Heat 1 tbsp of oil in frypan.
4.
Add mustard, cumin, split urad dal, chana dal and saute.
5.
Allow to crackle.
6.
Add curry leaves, red chilli, green chilli and grated ginger.
7.
Saute for few seconds.
8.
Add peanuts, cashewnuts, grated coconut and saute.
9.
Add hing, turmeric pwd, salt, sugar and lemon juice.
10.
Mix completely.
11.
Add soaked poha and combine well in low flame.
12.
Add few drops of water and cover and cook poha in low flame for 2 to 3 mins.
13.
Turn off flame.
14.
Garnish with freshly chopped coriander leaves.
15.
Delicous and healhty lemon poha is ready.
