Here comes the delicious, comforting, nutritious sweet corn soup recipe. Its my family favorite recipe and makes a good option to satisfy the food cravings during weekend lunch/dinner. This restaurant style yummy soup can be prepared very quickly using minimum ingredients. It helps to improve the appetite & is totally delicious. Sweet corn kernels - 1 cup
Corn flour - 1 tbsp
Butter - 1 tbsp
Sliced onions - 3 tbsp
Green chilli - 1
Sliced carrots - 3 tbsp
Sliced beans - 2 tbsp
Sliced capsicum - 2 tbsp
Sugar - 1/2 tsp
Pepper pwd - 1/2 tsp
Salt to taste
Fresh coriander leaves
Cook the sweet corn until tender.
Remove kernels from the corn cob.
Keep aside 3 tbsp of sweet corn kernels aside.
Add the remaining kernels to blender and grind to smooth paste by adding 1/4 cup of water.
Set it aside.
Add 1 tbsp of corn flour to small cup.
Add 1/4 cup of water and mix it to thin paste and set aside.
Melt butter in frypan.
Add sliced onions and saute until transculent.
Add sliced green chilli, capsicum, beans, carrots and saute in high flame.
Add 1 cup of hot water and cook covered with a lid for few minutes.
Now sweet corn paste from blender.
Add salt, sugar and pepper pwd.
Add 1 cup of water to adjust the thickness of the soup consistency as you desire.
Let it cook for 5 mins in low flame.
Add corn flour paste (step 7) and stir.
Add sweet corn kernels (step 3) and cook.
Add fresh coriander leaves and turn off flame.
Lipsmacking delicious restaurant style sweet corn soup is ready.
