Poori & aloo masala is a heavenly made for each other combo. Its very easy to prepare this restaurant style poori masala at home with basic ingredients. In this recipe the potatoes are boiled, mashed up well and cooked in mild, flavorful masala. Potato - 2 big
Oil - 2 tbsp
Onion - 1 big
Green chilli - 2
Garlic pods - 4
Curry leaves - a few
Turmeric pwd - 1/4 tsp
Mustard - 1/4 tsp
Cumin - 1/2 tsp
Split urad dal - 1/2 tsp
Hing or asafoetida pwd - a generous pinch
Salt to taste
Fresh coriander leaves
wash and peel the skin of potatoes.
Add it to cooker and add 1 cup of water.
Pressure cook until soft.
Mash the cooked potatoes by adding 1/4 cup of water as shown in video and set aside.
Heat oil in frypan or kadai.
Add mustard, cumin, split urad dal, hing, curry leaves and allow to splutter.
Add finely sliced onions and salt.
Saute until light brown.
Add green chilli slit lengthwise and grated garlic.
Saute for few more mins.
Add turmeric pwd and combine.
Add mashed potatoes and mix well with masala.
Let the aloo masala cook in low flame for 5 mins.
Turn off flame.
Garnish with freshly chopped coriander leaves.
