Crispy Medu Vada
Medu Vada is one of the traditional healthy food of South India, quite popular for its crispy deliciousness. Its one of everyone's favorite snack and most of us consider breakfast not fullfilling without medu vada along with pongal, idli, dosa, etc. It tastes irresistable with soft interior and crispy exterior texture. It isn't hard to prepare this healthy delicacy at home. Here is the easy video recipe, enjoy!!
To make Vada
Urad dal - 150 g
Sliced onions - 1/2 cup
Sliced green chilli - 1 tsp
Grated ginger - 1 tsp
Hing / asafoetida pwd - 1/2 tsp
Salt to taste
Oil to deep fry
Curry & coriander leaves
Wash and soak urad dal in 3 cups of water for 1 hour.
Drain water from the soaked urad dal.
Add to blender.
Add salt and grind to coarse paste.
Add few tsps of water and grind to smooth & fluffy paste. (take care not to add more water while grinding, else the batter becomes watery)
Add the smooth batter to mixing bowl.
Add chopped curry and coriander leaves, sliced onions, green chilli, ginger, hing and combine.
Heat oil in frypan.
Wet your hands with water and take a small portion of the batter.
Pat it flat and make a small dent at the centre as shown in video.
Drop it carefully in hot oil.
Deep fry in medium flame.
Flip to other side and deep fry until the vadas are crispy and golden in both sides.
Drain in kitchen tissue.
Crispy delicious vadas are ready.
