Everyone love pulao and the very name itself gives a tempting mouth watery appetite. This spicy and aromatic meal can be prepared easily at home with perfect balance of spices. It makes a easy, quick and healthy one pot meal for special occasions, parties and get-togethers. Our favorite combo with mixed veg pulao is raitha and makes for a comfort and satisfying complete meal with all the goodness of vegetables. Basmati rice - 1 & 1/2 cup
Oil - 2 tbsp
Ghee - 2 tbsp
Bay leaf - 1
Cinnamon - 1
Cardamom - 1 or 2
Cloves - 4 to 5
Marathi moggu - 1
Cumin seeds - 1/2 tsp
Sliced onions - 1/2 cup
Green chilli - 2 to 3
Ginger garlic paste - 1 tbsp
Chopped mint & coriander leaves - 1/2 cup
Sliced vegetables (carrot, peas, potato, beans, cauliflower, etc) - 1 bowl
Garam masala pwd - 1 tsp
Sliced capsicum - 2 tbsp
Salt to taste
Wash and soak basmati rice in water for 5 mins.
Drain water and set the basmati rice aside.
Heat oil and ghee in pressure pan.
Add bay leaf, cinnamon, cardamom, cloves and marathi moggu.
Allow to splutter.
Add cumin seeds and saute.
Add sliced onions, green chilli and saute until onions turn transculent.
Add ginger garlic paste and saute further.
Add finely chopped mint and coriander leaves and toss.
Add sliced vegetables like carrot, potato, peas, beans (you can add any vegetables of your choice)
Toss for a minute.
Now add salt and garam masala pwd.
Add basmati rice and give a good stir.
Add 2 & 1/2 cups of water and combine.
Taste and adjust salt and seasonings.
Cover the cooker and pressure cook for 1 whistle in high flame and simmer the flame for another 5 mins.
Turn off flame and wait to pressure go off.
Open the lid of the cooker, enjoy the yummy flavor of pulao.
Sprinkle finely sliced green and red capsicum.
Fluff the pulao gently.
