Here comes the favorite lunch box delicacy of South India, Lemon Rice recipe. It is one of the healthy and easy to prepare rice dish. It tastes tangy, flavorful with the freshness of lemon and the crunchiness from the roasted nuts. This tempting dish is prepared by adding lemon juice to the stir fried spices and tossed with cooked rice. It makes a great one pot meal for picnics, long journey, lunch box, etc. Lemon rice goes excellent with potato roast, raitha, yoghurt, pickle, pappad, chips, etc.

Ingredients

Cooked rice - 1 bowl

Lemon - 4 to 5

Gingely oil - 1 tbsp

Mustard - 1/4 tsp

Cumin - 1/2 tsp

Split urad dal - 1/2 tsp

Bengal gram dal (kadalai paruppu) - 2 tbsp

Grated ginger - 1 tsp

Green chilli - 1

Red chilli - 2

Sliced onion - 1/4 cup

Peanuts - 2 tbsp

Cashewnuts - 6

Asafoetida pwd - a generous pinch

Turmeric pwd - 1/4 tsp

Salt to taste

Fresh curry & coriander leaves

Instructions

1.

Cook rice and spread it in bowl.

2.

Squeeze juice from lemon and set aside.

3.

Heat oil in frypan.

4.

Season with mustard, cumin, split urad dal, bengal gram dal and allow to crackle.

5.

Add grated ginger, sliced onions, green chilli, red chilli, curry leaves and saute.

6.

Add hing, turmeric pwd, peanuts and cashewnuts

7.

Roast until crispy.

8.

Add salt and lemon juice.

9.

Mix good.

10.

Allow to boil for just few bubbles as shown in video.

11.

Turn off flame.

12.

Add the mixture to cooked rice and mix completely.

13.

Garnish with finely chopped fresh mint and coriander leaves.

14.

Healthy, delicious lemon rice is ready.

15.

It makes a yummy lunch box menu along with potato fry, crispy chips, egg fry, etc.
