Today I have for you a very soft, moist & rich cake recipe that is one of kids most favorite choice. This tutti frutti cake is one of the popular christmas cake recipe also. This recipe doesn't call for more ingredients and its an eggless version. This tastes sooper soft, spongy & flavorful with tutti frutti and nutty crunch in every bite. So here we go with the video recipe to prepare this soft & yummy cake at your home.
Maida flour (all purpose flour) - 1 cup
Tutti Frutti - 1/4 cup
Curd or yoghurt - 1/2 cup
Powdered sugar - 1/2 cup
Baking soda - 1/2 tsp
Baking pwd - 1/4 tsp
Vanilla essence - 1/2 tsp
Salt - a pinch
Lemon juice - 1/2 tsp
Whole milk - 2 tbsp
Oil - 1/4 cup
Sieve maida flour and keep it aside.
Grease the cake tin with oil and place butter paper on it.
Take tutti frutti in a small bowl.
Add maida flour and coat the tutti frutti with flour as shown in video.
Set it aside.
In a mixing bowl, add curd or yoghurt.
Add baking soda, baking powder, powdered sugar and stir.
Let it sit for 5 mins.
You can see the mixture has bubbles on it.
Now add vanilla essence, a pinch of salt, lemon juice, milk and oil.
Now add the wet mixture to the maida flour and fold gently.
The cake batter shouldn't be too thick or watery. (check video for consistency of the batter)
Add the tutti frutti and mix.
Add the batter to the cake tin and tap gently to remove air bubbles.
Preheat oven at 180 degree celcius for 10 minutes.
Bake the cake for 45 to 50 mins or until the cake done at 180 degree celcius.
Once the cake is golden and done, remove from oven and allow to cool in wire rack for 10 mins.

Slice the cake to thin pieces.
