Hi Friends, today I am pleased to share a very popular street food of India - Pav bhaji recipe. This rich and buttery delicious pav bhaji is quite easy to prepare at home. In this recipe, the mixed vegetables are cooked in a special blend of spicy gravy and served hot with soft butter toasted pav buns. Ingredients
Vegetables (carrots, cauliflower, potato, peas, etc) sliced - 2 cups
Oil - 2 tbsp
Butter - 1 tbsp
Turmeric pwd - 1/4 tsp
Red chilli pwd - 1 tsp
Onions - 2
Tomato - 2 big
Ginger garlic paste - 1 tbsp
Cumin seeds - 1/2 tsp
Garam masala pwd - 1/2 tsp
Coriander pwd - 1 tsp
Pav bhaji masala pwd - 1 tsp
Fresh lemon juice - few drops
Coriander leaves to garnish
Salt to taste
Instructions
1.
Slice all veggies and keep ready.
2.
In pressure cooker, add 1 cup of water.
3.
To it add all sliced vegetables, a pinch of turmeric pwd, 1/2 tsp red chilli pwd and 1/2 tsp of salt.

Cook the vegetables until soft.
5.
Mash the vegetables and set aside.
6.
In a pan, heat oil.
7.
Add cumin seeds and wait to splutter.
8.
Add sliced onions, salt and toss until transculent;
9.
Add ginger garlic paste and saute till raw smell disappears.
10.
Add mashed tomatoes and saute until oil separates.
11.
Add turmeric pwd, red chilli pwd, garam masala pwd, cumin pwd and coriander pwd.
12.
Add sliced capsicum and mix well.
13.
Cook by covering the pan with lid for 5 mins in medium flame.
14.
Add cooked & mashed vegetables and combine.
15.
Add pav bhaji masala pwd, fresh coriander leaves, a dallop of butter and cook for another 3 to 4 mins.
16.
Squeeze few drops of fresh lemon juice and turn off flame.
17.
Flavorful & delicious homemade pav bhaji masala is ready.
18.
Serve hot with butter toasted pav buns.
19.
It makes a healthy & filling evening snack or dinner.
