Mutton Kadai
Kadai Mutton is an authentic, royal Indian non-veg dish. Its lipsmacking delicious and makes up a popular delicacy for get-together and weddings. This easy & no fuss mutton kadai recipe can be prepared within 45 mins at home. The recipe is prepared by cooking tender mutton along with aromatic spices. Ingredients
Mutton pieces - 1/2 kg
Oil - 2 tbsp
Ginger garlic paste - 1 tbsp
Sliced onion - 1 cup
Green chilly - 2
Tomato sliced - 1 cup
Turmeric pwd - 1/4 tsp
Red chilly pwd - 1 tsp
Yoghurt - 1 tbsp
Cumin - 1/2 tsp
Bay leaf - 1
Cinnamon - 1
Cloves - 4
Curry leaves - a few
Coriander pwd - 1 tsp
Cumin pwd - 1/2 tsp
Saunf pwd - 1/4 tsp
Garam masala pwd - 1/2 tsp
Pepper pwd - 3/4 tsp
Dried fenugreek leaves - 1/2 tsp
Mint & coriander leaves - handful
Salt to taste
Instructions
1.
Clean, wash the mutton pieces.
2.
Drain water thoroughly and set aside.
3.
Heat oil in frypan.
4.
Add ginger garlic paste and saute in high flame.
5.
Add sliced onions and salt.
6.
Toss until onions turn light brown.
7.
Add green chilly, tomatoes and cook till soft.
8.
Add turmeric pwd, 1/2 tsp red chilly pwd and yoghurt.
9.
Mix well until the masala incorporates.
10.
Add mutton pieces and stir.
11.
Allow to cook for few minutes along with masala.

Turn off flame.

Transfer the contents to pressure cooker.
14.
Add 1 cup of water and stir.
15.
Cook the mutton for 4 whistles in high flame.

And turn the flame to simmer and cook for 10 mins or until the mutton is done.

Heat oil in kadai or fry pan.
18.
Add cumin and wait to splutter.
19.
Add bay leaf, cinnamon and cloves.

Wait to splutter.

Add curry leaves
22.
Add cooked mutton along with water.
23.
Add turmeric pwd, 1/2 tsp red chilly pwd, coriander pwd, cumin pwd, saunf and garam masala pwd.
24.
Allow to boil until the masala thickens.
25.
Add freshly ground pepper pwd.
26.
Sprinkle chopped mint and coriander leaves.
27.
Once the curry attains desired consistency, turn off flame.
28.
Sprinkle dried fenugreek (methi) leaves.
29.
Flavorful, hot and spicy kadai mutton is ready.
30.
It pairs up excellent with roti or rice dishes.
