Here goes the very popular South Indian style Vada Curry recipe that makes a very healthy & delicious combo with dosa, idli & parotas. It makes a special breakfast recipe due to its irresistable flavor & taste. Ingredients

To Make Pakodas (Vada)

Kadalai paruppu (gram dal) - 1 cup

Saunf - 1/2 tsp

Red chilly - 1

Fresh coriander leaves

Salt to taste

Oil to deep fry

To Make Vada Curry:

Oil - 1 tbsp

Cumin - 1/2 tsp

Onion sliced - 1 cup

Ginger garlic paste - 1 tbsp

Green chilly - 2

Fresh coriander leaves

Turmeric pwd - 1/4 tsp

Red chilly pwd - 1 tsp

Coriander pwd - 1 & 1/2 tsp

Fresh lemon juice - few drops

Salt to taste

Instructions

1.

Wash and soak kadalai paruppu (gram dal) in water for 2 hours.

2.

Drain water completely.

3.

Add it to blender.

4.

Add salt, saunf, red chilly and grind to coarse batter.

5.

Transfer to mixing bowl.

6.

Add freshly chopped coriander leaves.

7.

Mix well.

8.

Heat oil in fry pan.

9.

Drop the batter in batches.

10.

Deep fry in hot oil.

11.

Fry in medium heat until the pakoras are crispy and golden.

12.

Drain in kitchen tissue.

13.

Add the crispy pakodas to bowl and add 1/2 cup warm water to it.

14.

Heat oil in frypan.

15.

Add cumin and wait to splutter.

16.

Add sliced onions and saute.

17.

Add ginger garlic paste and toss.

18.

Add sliced tomatoes, green chilly and coriander leaves.

19.

Cook for few minutes.

20.

Turn off flame. Add it to blender and grind to smooth paste.

21.

Heat 1 tsp of oil.

22.

Add bay leaf, cardamom, cloves, cinnamon and curry leaves.

23.

Add freshly ground masala paste and stir.

24.

Cook for a minute.

25.

Add thick coconut paste and combine.

26.

Add soaked pakodas by draining water and mix.

27.

Cook covered for few minutes.

28.

Taste and adjust salt & seasonings.

29.

Squeeze few drops of lemon juice and turn off flame.

30.

Garnish with coriander leaves.

31.

Heavenly delicious vada curry is ready.

32.

It makes an ideal combo with idli, dosa, chapati etc.
