Ingredients
To Make Batter
Raw rice - 1 cup
Parboiled rice - 1 cup
Urad dal - 1/4 cup
Fenugreek seeds - 1 tbsp
To Make Sweet Kuzhi Paniyaram
Batter - 2 cup
Ghee - 2 tbsp
Jaggery powdered - 1 cup
Grated coconut - 1 cup
Cashew - 7
Cardamom powder - 1/4 tsp
Salt a pinch
To Make Savory Kuzhi Paniyaram
Batter - 2 cup
Onion sliced - 1/2 cup
Green chilly - 2
Oil / ghee - 1 tbsp
Mustard - 1/4 tsp
Cumin - 1/2 tsp
Split urad dal - 1/2 tsp
Hing - 1/4 tsp
Cashew - 5
Pepper - 1/2 tsp
Curry leaves - a few
Fresh coriander leaves
Salt to taste
Instructions

To Make Batter:

Wash and soak raw rice, parboiled rice, urad dal and fenugreek in water overnight or minimum 6 hours.

Drain water, add to blender and grind to smooth batter by adding little water.

Transfer batter to mixing bowl.
5.
Mix well with hands and cover with lid.
6.
Allow the batter to ferment for 6 to 7 hours.

Mix the batter completely and divide into two portions for making hot & sweet versions of Kuzhi paniyaram.

To Make Sweet Kuzhi Paniyaram

To one portion of the batter, add powdered jaggery, grated coconut, ghee roasted cashew, cardamom pwd and a pinch of salt (to enhance sweetness)

Mix thoroughly.

Grease the paniyaram mould with ghee.

Add the batter in the mould and drizzle ghee on top as shown in video.

Heat the pan in medium flame.

Flip the paniyaram with stick and cook until both sides are done and golden.

Remove from pan.

Healthy, delicious sweet kuzhi paniyaram is ready.

It serves as an excellent nutritious snack for tea time.

To Make Hot & Savory Kuzhi Paniyaram

Heat 1 tbsp of ghee in pan.

Add mustard, cumin, split urad dal, pepper, cashew and curry leaves.

Toss for a minute.

Add sliced green chilly and onion.

Saute till golden.
24.
Add hing and salt.
25.
Toss for few more minutes and turn off flame.

Add to the batter.

Add freshly chopped coriander leaves.

Mix completely.

Grease the paniyaram mould and add batter to it.

Heat it in medium flame and cook the paniyaram on both sides.

Once the paniyaram is golden and done, remove from flame.
