Ingredients
To Cook Mutton:
Mutton - 1/2 kg
Turmeric pwd - 1/4 tsp
Red chilly pwd - 2 tsp
Yoghurt - 3 to 4 tbsp
Ginger garlic paste - 1 tbsp
Salt - 1 tsp
To Cook Basmati Rice
Basmati rice - 2 cups
Oil - 1 tsp
Salt - 1/2 tsp
Water - 5 to 6 cups
To Make Biryani
Onions sliced - 2 cups
Green chilly - 4
Tomato sliced - 1 cup
Coriander & mint leaves - 1 cup
Ginger garlic paste - 1 tbsp
OIl - 4 tbsp
Ghee - 1 tbsp
Cumin seeds - 1/2 tsp
Cloves - 4
Cinnamon - 1
Bay leaf - 2
Star anise - 2
Javithri - 1
Saunf - 1/2 tsp
Fresh lemon juice - few drops
Salt to taste
Instructions

To Cook Mutton:

Wash and clean the mutton pieces.

Chop it to bite-sized pieces.
4.
Pressure cook in cooker, by adding turmeric pwd, red chilly pwd, yoghurt, salt and ginger garlic paste.

Once the mutton is cooked tender, set it aside.

To Cook Basmati Rice

Wash and soak basmati rice in water for 5 mins.

Heat water in a vessel. Add oil and salt.
9.
Add the soaked rice and cook it until it is three-fourth done.

Drain the water and set the rice aside.

Take care not to break the rice grains.

To Make Biryani:

Finely chop onion, tomato, green chilly slit lengthwise, coriander and mint leaves.

Make a fine paste of ginger and garlic separately.

Heat oil and ghee in the thick bottomed vessel.

Add cumin seeds, wait to splutter.
17.
Add saunf, bay leaf, cloves, cinnamon, cardamom, star anise and javithri.

Saute well.

Add finely chopped onions and green chilly.

Fry well to golden brown.

Add ginger garlic paste and fry until raw smell disappears.

Add tomato and freshly chopped coriander & mint leaves.

stir well for a minute.

Add cooked mutton pieces along with its masala.

Combine well.

Add cooked basmati rice and stir.

Add freshly squeezed lemon juice and 1/2 cup of water.

Cover the vessel with damp cloth and close with lid.

Place hot water in a vessel over it.

Keep the whole set up over a dosa pan and turn the heat to medium flame.

Let the biryani cook in dum for 5 mins.

Now open the lid, give a good stir so that the masala combines well with the rice.

Again cover and dum cook the biryani for 5 more mins.
