Sambar Vadai
Here goes the hotel style Sambar Vadai recipe, a delightful dish from the South Indian cuisine which is famous all over the world. It can be served as a main course, side dish or snack. The crispy delicious puffy urad vada is prepared and dipped in hot sambar. It tastes extremely appetizing with its distinctive Indian fragrance and we cannot stop taking one. Ingredients
For Sambar:
Toor dal - 1 ½ cups
Ghee - 1 tsp
Turmeric pwd - a pinch
Fenugreek seeds - 1 tsp
Oil - 2 tsp
Mustard - ¼ tsp
Cumin - ¼ tsp
Split urad dal - ½ tsp
Red chilly - 1
Curry leaves -5 to 6
Hing - a pinch
Onions sliced - ½ cup
Garlic - 2 pods
Tomato - 1
Chopped veggies - 1 small bowl
Turmeric pwd - a pinch
Red chilly pwd - 1 tsp
Coriander pwd -2 tsp
Fresh sambar pwd- 2 tsp
Tamarind paste - 1 tbsp
Coriander leaves
Salt to taste
For Vadai:
Urad dal - 2 cups
Green chilly - 1
Sliced onion - 1 cup
Curry and coriander leaves chopped – 2 tbsp
Hing - a generous pinch
Salt - to taste
Oil - to deep fry
Instructions

To make Sambar:

Wash and soak toor dal for 5 mins

Add it to pressure cooker

Add 1 tsp of ghee, turmeric pwd and fenugreek seeds (vendayam)

Add enough water and pressure cook until soft and mushy

Heat oil in a non-stick cook ware

Add mustard, cumin, split urad dal, red chilly, curry leaves

Wait to splutter

Add, hing, onions, garlic and fry for a minute

Add tomatoes and fry till they turns soft and oils shows up on sides

Add chopped vegetables (like drumstick, carrot, brinjal, pumpkin or any veggies of your choice)

Add turmeric pwd, red chilly pwd, coriander pwd and 1 tsp of freshly prepared sambar pwd

Add 1 cup of water and allow to cook for a while

Once the veggies are cooked, add the cooked lentils

Mix well

Taste and adjust salt and seasonings

Add tamarind paste and remaining sambarpwd

Sprinkle freshly chopped coriander leaves

Dash a few spoon of ghee before serving

To make Vada:

Wash and soak urad dal for 2 to 3 hours

Drain off excess water and add it to blender

Add salt, green chilly and grind it to smooth paste

Add finely sliced onions, curry leaves, coriander leaves and hing

The consistency of the batter should not be too tight or watery

Heat up oil in deep frying pan

Wet your palm and take a small ball of batter

Pat it flat and make a small hole in the centre

Drop it carefully in the hot oil

Deep fry till golden to reddish brown on both sides

Let the outer vada turn nice and crispy

Drain and set aside

Take warm water in a small bowl

Add the vada one by one, let it soak for a while

Strain and keep it aside

Vadas are ready to be added to sambar

To make Sambar Vada:

Take the Vadas in serving bowl

Pour generous amount of hot sambar all over

Garnish with finely chopped coriander leaves
