How about enjoying a layered and flaky parotta that melt-away in the mouth? Yes, Kerala or Malabar Parotta is a delicacy from God’s Own Country. The scrumptiously tasty parotta can be prepared easily at home with all purpose flour, yoghurt, milk and oil. The secret of the flaky texture of this parotta lies in kneading the dough more time to loose soft texture. It tastes best when served hot with a side of..raitha, vegetarian korma or with any non-vegetarian gravy.
Ingredients
All purpose flour / maida- 2 cups
Egg - 1
Sugar - 1 tsp
Yoghurt - 2 tbsp
Milk - ½ cup or as needed to knead
Salt to taste
Oil to cook
Instructions
1.
Beat egg in a bowl and keep it ready

In a mixing bowl, take all purpose flour
3.
To it add salt, sugar, yoghurt, 1 tbsp oil and mix

Add the beaten egg
5.
Combine all the ingredients

Now sprinkle milk little by little and knead gently
7.
Continue kneading the dough for 4 to 5 mins

The consistency of the dough should be soft, smooth and sticky

Now apply little oil/ ghee over the surface of the dough and keep covered

Allow to rest for 30 to 40 mins

Now grease oil in your hands and knead it for few more minutes

Divide the dough to equal sized balls

Dust the rolling disc with flour

Now roll the balls to thin shape using roller pin
15.
Spread oil over the surface of the roti
16.
Knead it to lengthwise pleats
17.
Twist it to round shape
18.
Dust with some more flour

Roll gently to small disc shape

Heat a non- stick pan on medium flame

Grease oil to it

Place the parotta carefully

Drizzle oil to the sides
24.
Cook on both sides flipping once in a while, till it turns golden brown in colour

Keep the cooked parotta warm in hot pack
26.
Repeat the same till all the parottas are done

Soft n fluffy Kerala parottas are ready to relish

Serve hot with raitha, spicy curry, pickle or any dip of your choice
