Nadan Style Egg Curry | Easy Egg Curry Masala

Ingredients
Eggs - 4
Oil - 2 tbsp
Mustard - ¼ tsp
Cumin - ½ tsp
Split urad dal - 1 tsp
Curry leaves -1 twig
Hing - a pinch
Onion -2
Grated ginger - 1 tsp
Green chilly - 1 or 2
Turmeric pwd - ¼ tsp
Coriander pwd - 1 tsp
Red chilly pwd - 1 tsp
Saunf - ½ tsp
Tomato - 2
Coconut grated - 1 cup
Garam masala pwd- 1 tsp
Coriander leaves to garnish
Salt to taste
Instructions
1.
Boil eggs and deshell it

Make slits on the sides
3.
Keep it aside
4.
Heat oil in a fry pan
5.
Add mustard, cumin seeds, split urad dal, curry leaves, hing and wait to splutter

Add finely sliced onion and saute for a minute
7.
Add sliced green chilly, grated ginger and toss

Add turmeric pwd, coriander pwd, salt and red chilly pwd

Combine well

Add finely sliced tomatoes, saunf and cook till oil separates

Grate coconut to fine pieces

Add it to blender and grind to smooth paste by adding little water

Add the coconut paste to fry pan

Mix well and allow to cook

Once the masala thickens, add garam masala pwd

Allow to cook for 1 minute

Add the boiled eggs

Mix well

Remove from flame by adding fresh coriander leaves
