Today’s special post is Khaman Dhokla - a very famous Gujarati Snack. It’s a savory steamed cake made from gram flour and other spices. It tastes sooper soft, moist and fluffy with a mild tangy sweet. This easy recipe can be prepared quickly and its healthy as it is steamed and..not deep fried. It makes a yummy combo with mint chutney. The secret of making fluffy & spongy dhoklas lies in the addition of fruit salt to the batter and water to the tempering.
Ingredients
Besan / gram flour - 1 cup
Sugar - 2 to 3 tsp
Citric acid - 1 ½ tsp
Turmeric pwd - a pinch
Ginger garlic paste - 1 tsp
Green chilly paste - ½ tsp
Eno salt - 1 tsp
Oil - 1 tsp
Salt - ¼ tsp
For Seasoning:
Oil - 2 tsp
Mustard - ¼ tsp
Cumin - 1 tsp
Split urad dal - 1 tsp
Hing - a generous pinch
Red chilly - 2 to 3
Curry leaves - 5 to 7
Grated coconut - 2 to 3 tbsp
Fresh coriander leaves
Instructions
1.
Take a mixing bowl

Add besan / gram flour, sugar, citric acid and mix well
3.
Add lukewarm water and mix well
4.
Ensure there is no lumps
5.
Allow to rest for 20 mins

Now add turmeric pwd, ginger garlic paste, green chilly paste, 1 tsp of oil and mix well

Take a big fry pan
8.
Add water and allow to boil
9.
Simmer the flame and place a small cup over it carefully as shown in the pic

Take a round tin and grease oil generously
11.
Now add 1 tsp of eno food salt to the batter

Stir quickly and transfer the batter immediately to the round tin

Place the tin with batter over the hot water and cover it with a lid

Allow to cook in high flame for 20 to 25 mins

Once it is done, turn off the flame

Remove it from the pan

Allow to cool for 5 mins

Meanwhile lets prepare the seasonings

Heat oil in a frypan

Add mustard, cumin, split urad dal, curry leaves, red chilly and hing

Wait to splutter
22.
Add ¼ cup of water and allow to boil for a minute

Add coriander leaves and grated coconut
