Anyone who loves Mushrooms, will absolutely love Mushroom Chettinad. This can be prepared with easily available ingredients in your pantry. It is best served as starter, side dish or even can be with steamed white rice or fried rice. This is prepared with.. mushrooms, onions, tomatoes and spiced up with delicious chettinad style masalas to give the unique flavor and aroma.
Ingredients
Mushrooms halved - 1 cup
Grated coconut - ¼ cup
Cumin - 1 tsp
Fennel - ½ tsp
Coriander seeds - 1 tsp
Red chilly - 2 or 3
Curry leaves - 4 to 5
Cardamom - 1
Cloves - 2
Cinnamon - a small piece
Ginger garlic paste -1 tbsp
Cashewnuts - 5 to 6
Chopped onions -1 cup
Mashed tomato - ½ cup
Turmeric pwd -a pinch
Red chilly pwd - ½ tsp
Crushed black pepper - ½ to 1 tsp
Lemon juice - few drops
Oil - 1 tbsp
Salt to taste
Fresh coriander leaves to garnish
Instructions
1.
Heat 1 tsp of oil in a non stickpan
2.
Add grated coconut, cumin, fennel, coriander, red chillies, curry leaves, cardamom, cloves and cinnamon

Roast in low medium flame for 3 to 4 mins

Turn off flame

Allow to cool and grind it to fine paste by adding cashewnuts and enough water

Heat oil in frypan
7.
Add sliced onions and saute until it turns golden
8.
Add curry leaves and masala paste
9.
Saute well for a minute

Now add mashed tomato

Add turmeric pwd, salt and red chilly pwd

Cook for 3 to 5 mins or until the oil separates out from the masala

Now add the halved mushrooms

Add finely crushed fresh black peppercorns

Mix well and allow to cook in low medium flame for 5 to 7 mins

Once the mushrooms are done, squeeze few drops of lemon juice

Combine and turn off flame

Garnish with freshly chopped coriander leaves, split chillies and onions
