Chakli | Instant Murukku | Crispy Snacks
Diwali, the Festival of Lights, one of the biggest festival of India, is fast approaching and only few days are left to celebrate our colourful festival with great enthusiasm and happiness..! Here I am today with an excellent snack that can be prepared easily and stored for at least a month. This Spicy Murukku is one of my childhood favorite snack and my mom makes it the best. I just love the combo of spicy, crunchy murukku with piping hot cup of masala chai.
Ingredients
Rice flour - 2 cup
Bengal gram flour - ¼ cup
Urad dal flour - ¼ cup
Roasted gram dal flour - ¼ cup
Omam / ajwain / carom seeds - 1 tsp
Butter - 2 tbsp
Red chilly pwd - ½ to 1 tsp
Oil to deep fry
Salt as needed
Water as needed to make soft dough.
Instructions
1.
Take the rice flour in the mixing bowl

Add the besan flour, urad dal flour, roasted gram dal flour and hing
3.
Add carom seeds/ ajwain and salt
4.
Mix well
5.
Add red chilly pwd and combine
6.
Give a good mix
7.
Now add water little by little and knead
8.
Add butter and knead it to smooth soft dough
9.
Wash and clean the murukku press/ mould
10.
Grease it well with oil
11.
Stuff the mould with dough

Press into spiral shape in a greased ziplock cover

Heat oil in a kadai
14.
Once the oil is hot, place the pressed murukkus gently in hot oil
15.
Fry the murukkus in batches in medium flame
16.
Take care not to overcrowd the oil
17.
Deep fry until the murukkus turn crisp and golden brown on both sides
18.
Remove and place it in kitchen towel to drain excess oil
19.
Spicy and crispy Murukkus are ready to relish
20.
Allow to cool and store in an air-tight container for long shelf life
