Banana Walnut Cake is so easy to make at home & It tastes delicious with rich banana flavor and a light walnut crunch. For those who are beginners in baking, this is one of the best cake to start with..! Nutmeg, walnuts and a touch of vanilla extract added to the cake batter, really brings out the banana in this healthy cake and it tastes not too sweet with light & fluffy texture. Ingredients
Plain flour / All purpose flour / Maida - ½ cup
Whole wheat flour / Atta flour - ½ cup
Ripe banana (big ) - 1
Walnuts chopped - ¼ cup
Eggs - 2
Butter - 100 g
Brown sugar - 100 g
Vanilla essence - 1 tsp
Baking pwd - 1 tsp
Cinnamon pwd - ¼ tsp
Nutmeg pwd - 1/8 tsp
Milk - 3 to 4 tbsp
Instructions
1.
Grease a square tin with oil or butter and line with baking paper.

Preheat oven to 170 °C.

Add eggs to a mixing bowl.
4.
Beat it with a hand blender till light & fluffy.
5.
Cream butter & brown sugar together in a food processor or bowl till light.
6.
Mix in vanilla essence.
7.
Sieve together plain flour, wheat flour, salt, baking pwd, cinnamon pwd and nutmeg pwd.
8.
Mash bananas in a mixing bowl and keep ready.
9.
Now add the sifted flour mixture, chopped roasted walnuts and mix well.
10.
Add milk (approx 2 to 3 tbsp ) to correct the consistency of the batter.

Transfer the batter into the prepared tin and place it in the preheated oven.
12.
Bake at 170 °C.for 30 to 35 mins.

Test with a skewer for doneness.

It should come out clean. If the batter sticks to the skewer, bake for another 5 to 7 mins.
15.
Allow the cake to cool for 10 mins in the tin before tuning it on to a wire rack.
16.
Slice into squares after the cake has completely cooled down.

You can serve this cake cold or hot.
