Pal Payasam | Milk Kheer
For celebrating Karthigai Deepam , we prepared Pal Payasam, which is a delicious Indian dessert recipe. It is very easy to make with few ingredients and a real treat for our tastebuds ! Usually this payasam is prepared for neivedyam ( offering to God ) & on special occasions like marriage & Feast. The best taste for Pal Payasam is when the raw rice is cooked in milk on slow heat in heavy bottomed vessel or in pressure cooker. Do try and enjoy this rich & creamy dessert..:)
Full Cream Milk - ½ l
Raw rice or basmati rice - 2 tbsp
Ghee - 1 to 2 tsp

Heat a pan and add rice to it.
Sauté it in low flame for 2 to 3 mins.
Allow to cool and grind it coarsely in a blender.
Take a pressure cooker and grease the bottom of it with ½ tsp ghee.
Add milk and allow to boil.
Now add the powdered rice grains, mix well.
Pressure cook for one whistle and simmer it till the rice is cooker. ( aprrox 5 mins )
Once the pressure goes off, mash the contents.
Transfer it to the pan, add sugar, a small pinch of salt ( to enhance sweet taste ) and stir well.
Allow to boil in low medium flame, until it reaches the desired consistency.
( on cooling, the payasam turns thick, so you turn off the flame accordingly )

It tastes best, when it is taken chilled.
