Kara Boondhi | Diwali Snacks
Kara Boondhi is a quite addictive spicy snack, prepared in almost every home during festival days like Diwali. In Tamil “Kara” means spicy and “ boondhi “ means drops. This fried snack is made from beasan flour & is very easy and quick to prpare. We need a special boondhi Ladle for making this Boodhi, which is available in Indian stores. This is everyone’s favorite at our home now and it’s a perfect munch duing this chill winter time Try this spicy and rich taste of Kara boondhi recipe ..:)
Besan flour - 1 cup
Rice flour - 2 tbsp
Hing - a pinch
Baking soda - ¼ tsp
Turmeric pwd - a pinch
Red chilly pwd - 1 ½ tsp
Oil - For deep frying
Peanuts - 2 to 3 tbsp
Cashewnuts broken - 2 tbsp
Curry leaves - 8 to10
Salt to taste

In a wide bowl, mix besan flour, rice flour, hing, baking soda, turmeric pwd, red chilly pwd and salt.
Add water and make it to batter of thick consistency.
The batter should not be very thick or very light, but of a pouring consistency.
Add a tsp of oil and keep the batter aside for 20 minutes.
Now heat oil for deep frying.
First fry peanuts, cashew and curry leaves to crisp and keep aside.
Now take a boondhi ladle, ( perforated ladle ), which has holes in it.
Keep the ladle on top of the hot oil , a little higher,
Now pour a ladle full of batter in the Boondhi Ladle.
Tap gently or press the batter down gently.with the ladle.
You can see tiny droplets of batter falling down in hot oil and bubbling.
Take care not to overcrowd the oil – there should be exactly one layer of boondhis time, else the boondhis form a sticky , clumpy mess.
Keep the flame in low medium and turn over to cook on both sides evenly.
Once it turns crisp and golden brown, drain in tissue paper.
Repeat the same for the remaining batter as well.
Take a mixing bowl, add the prepared boondhis, 1 tsp red chilly pwd , salt and roasted cashews, peanuts and curry leaves.
Mix everything together.
Kara Boondi is ready..!
Store in an air-tight container.
This delicious snack can be had anytime or with coffee.
