Puran Poli | Sweet Poli - Diwali Sweet
Puran Poli, a tasty Indian bread stuffed with sweetened yellow lentils, is a traditional sweet from North India. It is made during special occasions & festivals like Diwali, holi etc. It is also known as Holige in Karnataka, Bobbatlu in Andhra Pradesh. The recipe is very simple to prepare. The lentil jaggery stuffing is known as Puran and the roti covering is called Poli ( Puran Poli ) . It makes a healthy breakfast dish or served as a snack. Toor dal - 1 small cup
Turmeric pwd - a pinch
Jaggery powdered - 1 cup
Cardamom pwd - ¼ tsp
Nutmeg / Jaiphal - ¼ tsp
For Outer dough:
Whole wheat flour - 1 cup
All Purpose flour / maida - ½ cup
Oil - 2 tbsp
To Prepare Stuffing:
Wash and soak toor dal for 20 mins.
Pressure cook dal by adding a pinch of turmeric pwd till soft & mushy.
Transfer it to heavy bottomed wok / kadai.
Add jaggery and cook with stirring.
The jaggery dissolves and starts binding together.
When it comes to thick dough consistency, remove from heat.
Add cardamom pwd, nutmeg pwd and mix well.
Cool to room temperature.
It turns into soft, sticky dough-like consistency.
The stuffing is ready.
To Prepare outer dough:
In a mixing bowl, add whole wheat flour, all purpose flour and oil.
Add water little at a time and knead it to very soft dough.
Cover & set aside for 10 to 15 mins.
To Prepare Puran Poli:
Knead the dough and divide it to small balls.
Make small balls out of dal stuffing too & keep ready.
Dust one dough ball with flour.
Roll it into small circle.
Place filling in the centre.
Seal the edges by pulling the edges together to make a ball.
Place the ball with sealed side down, flatten with fingers and keep aside.
Repeat the same for all balls.
Lightly press the filled ball in wheat flour .
Roll it into a circle, with a rolling pin by applying gentle pressure.
Heat a skillet and add a tsp of oil to it.
Place the Puran Poli onto the skillet and cook for about a minute.
Flip it over.
Spread 1 tsp of oil to the sides.
When puran poli turns golden brown on both sides, remove from skillet.
It tastes lipsmacking, when it is served hot with a cube of clarified butter on top.
