Sabudana Vada | Pearl Sago Fritters
Sabudana Vada or Pearl Sago Fritters is a crispy & delicious snack of North India...!! It is a filling & nutritious snack , that makes a best accompaniment along with hot cuppa chai or coffee. We know sabudana is a rich source of fibre contents, so this recipe is a great way of incorporating the benefits of sabudana into a delectable crispy snack. The main ingredients used for spicy healthy taste of this vada are cumin pwd, red chilly pwd , etc. It is often served hot with green chutney or coconut chutney. Be sure to prepare enough, as the crunchy & melt in the mouth taste of these vadas, will vanish in no minutes, leaving us to crave for more...:)
Ingredients
Sabudana - 1 ½ cups
Potatoes - 1 big
Peanuts roasted - ¾ cup
Cumin pwd - ½ tsp
Red chilly pwd - ½ tsp
Curry leaves - 6 to 8 finely chopped
Coriander leaves - 3 tsp chopped
Salt to taste
Oil to fry
Instructions
1.
Clean, wash & soak the sabudana in a little water, just enough to cover it.

Allow to soak overnight or for 5 to 6 hrs

You can see all the water is been absorbed and the sabudana is swelled.
4.
Drain the excess water completely.
5.
Boil, peel the skin of potates, mash it & keep ready.
6.
Take roasted peanuts, remove the husk.
7.
Grind it to coarse pwd.. ( I used rolling pin to grind .

Now add the sago, mashed potatoes, cumin pwd, red chilly pwd, salt, crushed peanuts, curry leaves & cilantro.

Mix carefully not to mash the sago.
10.
Make small balls with this mixture, flatten them a bit and set aside.
11.
Heat oil in a fry pan.
12.
When the oil is smoky hot, turn the flame to medium & fry these flattened pieces.
13.
Fry until they turn golden brown on both sides.
14.
Drain on paper towels
15.
It makes a lipsmacking combo with hot cup of tea or coffee.
