Shrikand is one of the famous Indian festive sweet made of strained Yoghurt. It is an easy dessert recipe, so that anyone can make at home. This chunky creamy delicacy is made from fresh low fat yoghurt. And is flavored with saffron, cardamom & pistachios. It is a ready to serve dessert & is popular all over the world coz or its wonderful taste & ease in preparing. Give a try & enjoy..!
Ingredients
Fresh Yoghurt - 1 large bowl
Saffron - a few strands
Warm milk - 1 tbsp
Sugar - ½ cup
Cardamom pwd - ¾ tsp
Pistachio & almond nuts - for garnishing
Instructions
1.
First to prepare Chakka, we need a clean muslin cloth.
2.
Spread the muslin cloth over a bowl.
3.
Carefully pour the thick curd / yoghurt on it.
4.
Lift up and tie the ends together.
5.
Hang it over the sink, so that the whey water drains.
6.
If needed, hang it over a vessel to collect this water from yoghurt.
7.
Hang it overnight or for 5 to 5 hrs, so that all the water content drains.
8.
This strained and drained curd is called Chakka.
9.
Take this into a bowl.
10.
Dissolve the saffron strands in warm milk.
11.
Add sugar, cardamom pwd, saffrom mixture and combine.
12.
Keep aside for 25 to 30 mins to allow sugar to dissolve.
13.
Stir once in a while till all the sugar dissolves.
14.
Now, churn the ingredients using the hand blender.
15.
Add crushed pistachio & almond nuts.
16.
Transfer to a glass serving bowl.
17.
Garnish with more chopped pistachios & almonds.
18.
Serve it at room termperature or chill it for 1 to 2 hrs before serving.
19.
Enjoy creamy & delicious Shrikand at home...:)
