Vathal Kuzhambu | Spicy Drumstick Vathakuzhambu
Vathakuzhambu is a spicy traditional South Indian dish. Though Vathakuzhambu is made with dried vegetables like sundakkai, manathakkali, brinjal, kothavarangai (cluster beans) etc…, this tastes ideal with fresh vegetables like drumstick, brinjal, ladies finger, potatoes etc. I tried with onions, tomato, garlic and drumstick to make a tastier version of this kuzhambu. I tasted little bit and it is simply mouth watery…! And it combines excellent with white steamed hot rice and roasted pappad. You’ll love this easy Indian recipe…!!!
Drumstick - 2
Onion - 1
Tomato - 1
Sesame oil - 3 tbsp
Mustard - ¼ tsp
Cumin - ½ tsp
Fenugreek - 1 tsp
Urad dal - 1 tsp
Chick pea - 1 tsp
Garlic - 5 or 6
Thick tamarind juice - a small cup
Turmeric pwd - ¼ tsp
Red chilly pwd - 1 tbsp
Coriander pwd - ½ tbsp
Pepper pwd - ½ tbsp
Ghee - 1 tsp
Curry & coriander leaves
Salt to taste
Wash and soak lemon sized tamarind in water and take thick tamarind juice.
Heat oil in a deep frying pan .
Add mustard, cumin, fenugreek, urad dal , chick pea, curry leaves and wait to splutter.
Add chopped onion pieces, grated garlic and fry to transculent.
Add tomato puree and fry for 2 mins.
Add chopped drumstick pieces, and sauté it.
Add turmeric pwd, red chilly pwd, coriander pwd, pepper pwd, salt and combine well.
Now take thick tamarind juice and add to this mixture.
Stir well and allow to boil.
Add ½ cup water and cook covered.
Once, the veg is cooked and the kuzhambu attains thick consistency, add some coconut milk ( this enhances the taste and flavor )
Allow to boil for 2 mins.
Now add, a tsp of ghee and turn off the flame.
Garnish with freshly chopped coriander leaves.
