Appam is a popular breakfast recipe of South India. It is tasty rice flour pancakes. Though easy to make, they take a little practice to perfect Appam. A well fermented batter will form small holes all over the appam while cooking. This makes the middle of the appams very soft, light & spongy, with crispy golden edges. Ingredients
Raw rice - 1 cup
Boiled rice - 1 cup
Toor dal - 1 tsp
Moong dal - 1 tsp
Fenugreek seeds - 1 tsp
Urad dal - ¼ cup
Grated coconut - ¼ cup
Salt to taste
Instructions
1.
Wash and Soak raw rice, boiled rice, toor dal, moongdal, urad dal, fenugreek seeds for 3 to 4 hrs.

Blend with grated coconut and salt in a mixie to smooth batter.

Leave the batter for fermentation for 8 hrs.

Spread this fermented batter in a non- stick Appam pan.
5.
Put a lid on the pan and heat it for 2 mins.
6.
Soft and spongy yummy Appam is ready.

Serve hot with thick coconut milk with sugar
