Peanut rice is a delicious South Indian rice. It is very simple to prepare and tastes excellent with a combination of roasted pappad or hot potato chips. You can also make it with leftover rice. The rich aroma of this recipe makes your heart go nuts for peanuts :)) To speak about the nutritional facts, peanuts are very good source of Vit E, niacin, folate, protein, manganese and monounsaturated fats. Ingredients
Peanut - 1 cup
Red chilly - 5
Raw rice - 2 cup
Urad dal - ¼ cup
Bengal gram dal - ¼ cup
Gingely oil - 1 tbsp
Asafoetida - ½ tsp
Ghee - 1 tbsp
Mustard - ¼ tsp
Curry leaves - handful
Salt to taste
Instructions
1.
Wash and soak raw rice for 10 mins and pressure cook it.
2.
Once the pressure goes off, add 1 tbsp of gingerly oil, mix well and spread it in a wide bowl. Allow to cool.

Take a dry pan, add peanuts and roast until fragrant

Take it aside and allow to cool.
5.
Add urad dal, Bengal gram dal, red chilly, asafoetida and fry.
6.
Take it aside and allow to cool.
7.
Transfer to a mixer and grind to coarse pwd.
8.
Now add peanuts and further grind for 4 seconds.
9.
Add this coarse pwd to the cooked white rice and mix gently.
10.
Heat 1 tbsp ghee in a fry pan.
11.
Temper with mustard, urad dal, Bengal gram dal, red chilly, curry leaves and asafetida pwd.
12.
Drop this to the peanut rice and stir well to combine.
13.
Tasty n Healthy, Peanut rice is ready to be served.
