Thattai is a traditional South Indian snack, great to nibble with piping hot tea on a cold wintery day. I learnt this favorite recipe from my mother, who is an excellent cook. Check out this recipe here…
Boiled rice - 2 cup
Fried gram - ¾ cup
Oil - 500 ml
Red chilly - 6 to 8
Garlic - 10 pods
Melted butter - 4 tbsp
Sesame seeds - 1 tbsp
Bengal gram dal - 1 tbsp
Toor dal - 1 tbsp
Moong dal - 1 tbsp
Peanut - 8
Salt to taste
Wash and soak boiled rice in water for 4 to 5 hrs.
Grind in mixer to fine thick batter by adding little water.
Soak 1 tbsp Bengal gram dal, 1 tbsp toor dal and 1 tbsp moong dal in water for 10 mins.
Grind fried gram to fine pwd.
Grind red chilly and garlic to smooth paste by sprinkling water to it.
Now combine all the above, add water, knead it to make a soft dough.
To this add melted butter, salt, sesame seeds, soaked and drained Bengal gram dal, toor dal, moong dal, asafoetida and crushed peanuts.
Mix all the above.
Allow to remain for 5 minutes.
See to it the dough is soft. It shouldn’t be tight or watery, since the secret of crispy crunchy Thattai lies in the texture of this dough.
Wet your palm with a drop of oil. Take a small lemon sized ball of the dough.
Pat it flat into a small circle.
Transfer it into the hot oil.
At a time, 8 to 10 Thattais can be fried.
Take it from oil, once the Thattai turns golden brown in colour.
Crispy, delicious Thattai ready to taste.
